I was craving for pizza and remembered I had fillo dough in the freezer, so I decided to be creative with it. As they say, there’s always a first time for everything, it was fairly easy to make and the pizza turned out surprisingly good.
Thaw one roll of fillo dough, following thawing instructions on package.
Preheat oven to 350ºF.
Unroll and cover the fillo pastry sheets with a damp towel or plastic wrap to prevent drying out.
Grease a 15″x 10″ baking sheet or pan
Lightly coat each sheet of fillo with melted butter as you overlap them on the baking sheet.
Roll fillo edges onto themselves to form the pizza crust.
Top with your favorite ingredients. (If toppings are very moist, like tomatoes or sauces, pre-bake the crust for 3 to 4 minutes before adding toppings.)
Bake about 30 minutes or until the topping is cooked through and the fillo is golden brown.
I added mine with whatever I found in my fridge. I added quickmelt cheese, cream cheese, tomatoes and spinach. I baked it for about 30 mintues then added parmesan cheese on top.
I had a few sheets of fillo dough left that I didn’t want to go to waste, so I tried making a pizza dumpling, it turned out looking not so appetizing but it’s just as good!
