If you’re looking for a quick and easy solution to entertaining, consider this appetizer. It’s the ultimate finger food, requiring no forks, only napkins and plenty of good taste. After all, they’re called appetizers for a good reason. I hate to admit it but this is not my recipe.
If you’re a fan of Rachel Zoe like I am, you may have seen this on the last episode of Rachel Zoe’s Project reality tv series Season 4. She made this for her friends and everyone was going ba.na.nas.
Glazed Apricot-Mustard Salami
Prep time: 10 minutes
Cooking time: 60 minutes
2 pound whole beef salami or bologna
1 cup apricot preserves
½ cup spicy Dijon mustard
Preheat oven to 350 degrees. Line a baking sheet with foil (preferably Reynolds non-stick).
In a large bowl, combine preserves and mustard. Set aside.
Place salami on a cutting board and make thin 1/8-inch slices lengthwise but do not slice all the way through. Slice the salami from one end to the other, but keep it intact at the bottom. It will look like an accordion.
**I used bologna because that’s what I had and I sliced mine a bit thicker. I used half of the baking tray for my husband’s mojo potatoes. I also forgot to line the baking pan with foil! 😁
Put salami on the prepared baking sheet and pour apricot-mustard all over making sure it goes in between the slices.
