Fried Crab with Salted Egg Yolks

I have to warn you, this recipe is not for the faint of heart. I have been seeing this dish being posted on Instagram so I thought I’d give it a shot.

Fried Crab with Salted Egg Yolks!

 

 

The challenge for this recipe is how you’ll kill the crab gently.

 

Just open the flap and stab the soft portion until it stops moving. I have to admit I asked my girl friday to do this for me.

 

 
 

Scrub or remove excess dirt from the crab including the strings and cut it up into several pieces. Coat the pieces with a mixture of flour, salt and pepper then deep fry until golden brown or when you think the crab is cooked. Drain excess oil.

 
 

Salted Duck Eggs. Remove yolk including the thin film that covers the yolk. I used 6 pieces of salted eggs. Then mashed the yolk. Set aside.

 


 

On a separate pan or wok, melt 1 bar of butter then add mashed salted egg yolks.

 

 
 

The mixture will foam up like magic! 

They say the most important part of this recipe is the curry leaves. Unfortunately, the grocery ran out just when I needed them! So I had to use scallions.

Add chopped scallions and chillies. Lastly, add a teaspoon of pepper and sugar to taste.

Pour over sauce on fried crab and prawns. (I also fried some prawns.)

 

 

 

    

The verdict? It’s the most delicious crab recipe I have ever tasted! The sauce works better for crabs since it gets mixed up with the crab roe thus giving it more flavor. I can’t wait to cook this dish for my family and friends! 


FRIED CRAB WITH SALTED EGG

Cut up fresh crab into 4 pcs
Coat with flour, salt and pepper
Deep fry until golden brown
SAUCE:
Saute 1 bar of butter
Add 6pcs mashed salted egg yolk. Remove white.
Add chili and chopped scallions.
Add 1 tsp of pepper and 1tsp of sugar to taste.
Pour sauce over crabs or prawns.
